THE CHASE PARK PLAZA ROLLS OUT ‘GREEN’ INITIATIVES

Commitment to food sustainability and the environment leads to honey, fresh greens

 

ST. LOUIS (April 19, 2018) – The Chase Park Plaza Royal Sonesta Hotel has recently introduced two new efforts that are helping the hotel become more sustainable and environmentally friendly.

 

This month, the hotel’s rooftop will be home to 20,000 honeybees. According to Smithsonian Magazine, bee abundance declined across 23% of U.S. land area between 2008 and 2013. The Chase Park Plaza is committed to supporting bee health and hopes to be home to 80,000 bees by this summer.  

 

Executive Chef Gunter Weber, Executive Sous Chef Eric Philips and Chef de Cuisine Nathan Sandknop, who oversee The Chase Club and The Preston restaurants at The Chase Park Plaza, have all recently completed training as certified beekeepers and will oversee the two separate colonies of honeybees.

 

“We are proud to support the health of honeybees here locally,” says Matthew White, Director of Food & Beverage for The Chase Park Plaza. “Honey harvested from the hives will be used in recipes for The Chase’s restaurants with the added goal of selling honey to retailers in the future.”

 

Aligning with Sonesta’s “Food is Art” initiative, the hotel’s kitchen has also launched a micro-greenery, which is used for growing basil, mustard, arugula, bulls blood (beets), chives, radish, and mizuna, as well as larger plants including lettuces, kale and mustard greens.

 

All greens harvested are used in dishes prepared for The Chase Club and The Preston.
